Whenever I make this Thermomix passionfruit curd, I feel like a bit of a cheat. You could hardly even call it cooking – plonk the ingredients in the bowl, push a few buttons and walk away. Twenty minutes later you have a creamy curd that can used in desserts, tarts or simply gobbled from a jar with a spoon (ahem). But when you’ve got 20 people coming over for lunch, it seems sensible to take shortcuts where you can, right?
Passionfruit curd is surprisingly versatile and its pleasant tartness provides a foil to many sweet dishes. It stores in the fridge for weeks – not that it ever lasts that long at my place. You can use this Thermomix passionfruit curd to:
// sandwich together Victorian sponges
// drizzle over pavlova
// sandwich small meringues
// spread on pancakes or pikelets
// serve alongside fresh raspberries

- 80g passionfruit pulp (about 6-8 passionfruit)
- 100g butter
- 120g sugar
- 4 eggs
- Place all ingredients in TM bowl. Cook for 20 minutes/80 degrees/speed two. Curd is ready if it coats the back of a wooden spoon.
- Pour curd into a sterilised jar or container and keep in fridge.
